Why we opened

One pot, one vision

Three years ago, we started with a single stockpot simmering in a borrowed kitchen and a conviction: the best bowls come from broth that refuses to rush. No shortcuts, no powder, no yesterday's stock reheated. Just bones, aromatics, and time—twelve, fourteen, sometimes sixteen hours at a low, steady roll.

We opened this counter with twelve seats and a handwritten menu because we wanted to feed people the way we'd want to eat: bowls that taste like someone cared about every element. Word spread. The line grew. We're still that same small team, still making everything fresh, still saying no to anything we can't do right.

The craft

Why broth takes time

A great broth is built on patience. We source bones carefully—a mix of marrow bones for body, knuckle bones for gelatin, and aromatics (ginger, scallion, star anise, dried mushroom) toasted just enough to release their oils without bitterness. Then we let it go, skimming the impurities that rise in the first hour, maintaining a bare simmer so the broth stays clear and clean, extracting every layer of umami without clouding the pot.

We make fresh batches every morning. What simmers today is what you eat today. Nothing waits in a walk-in. This means our menu reflects what's ready, what's at its peak—and that's exactly the constraint that keeps us honest.

The pull

Noodles that answer the broth

While broth simmers, our cooks hand-pull and cut noodles to order. The dough is simple—flour, water, salt, a touch of kansui for springiness—but the texture is everything. We aim for noodles that are springy enough to bounce against your palate, with just enough chew to let you know they're alive, not soft.

Thickness isn't random. A delicate, clear broth gets thin, elegant noodles that drink it in. A rich, bone-forward broth gets thicker strands that stand up and hold their shape. Noodle and broth move together on the spoon, and that balance is what makes a bowl sing.

Walk in and you're at a counter—twelve seats facing an open kitchen. You'll watch your bowl come together: noodles dropped into boiling water, drained, cradled in broth, topped and finished in under three minutes. There's something about seeing the kitchen work that changes how the meal tastes.

We built this place small and fast on purpose. Perfect for a solo lunch, a quick dinner between plans, or a small group sharing bowls and stories. The turnover keeps everything moving, the kitchen stays in rhythm, and you eat while the heat is still rising.
